My Dinner: Mustard Lamb Chop with Roasted Sweet Potatoes & Beets

I marinated the Lamb Chop in mustard and dill, served with mustard seasoned roasted sweet potatoes and beets (removed the meat from the bone for serving)

Looked into the depth of my freezer and found this dinner… Atlantic Salmon (previously frozen) Marinated in Dill and Cognac , than pan seared, served on top of a melody of veggies (previously frozen) all finished in a lemon butter pepper sauce (not frozen).
TV Dinners never tasted this good!
